Default I belong to a wine tasting group and need to make sandwiches for 35. What would be

good, reasonable and easy?
We are having organic wines from all over the world and people eat while they drink.

If you're drinking white wine-
try making chicken salad the old fashion way. i make it like this
boil chicken breasts (about 10 for 35 people)
pull apart into chunks
boil 6-8 eggs with the chicken for faster cooking
in separate boil combine 24 oz. of mayo (REAL) with one package of italian dressing seasoning. (you'll find it in the dressing aisle.)
combine chicken and eggs with mayo mix.
add about 4-5 tablespoons of sweet relish. (it'll bring out the sweetness in the wine)
you can leave in a bowl with crackers and bread in a serving dish and your guests can choose, or you can make into sandwiches, hope this helps.

Ina Garten on Foodnetwork's Barefoot Contess made a really easy sandwich that would probably go nicely with wine. She used small brioche buns and filled them with slices of sharp white cheddar and mango chutney. If you're interested in tea sandwiches, I've made a similar sandwich myself using softened cream cheese. Layer 1 slice of thin white bread with some of the cream cheese, top that with a slice of thin wheat bread, and then some mango chutney. Top that with one more slice of thin white, cut the crusts off and cut each sandwich into fingers. You can't go wrong with cucumber sandwiches...make a compound butter with chopped fresh herbs like dill, parsley and chives and then spread the softened butter on bread. Top that with thin slices of peeled cucumber and another piece of bread. Cut the crusts off and cut them into 4ths. You can also use radishes instead of cucumber. Another good sandwich (that's a little more hearty) would be a smoked turkey sandwich with cranberry spread: use pumpernickle bread, top with smoked turkey and some arugula, spinach or other leaf lettuce. Make the spread by combining mayo or Miracle whip and dried cranberries. You can leave them whole or pulse the spread in the food processor. Spread both top and bottom of the pumpernickle with the spread to keep the sandwich moist.

Use loaves of french bread - 3 should be enough. Slice open and spread on a good mustard-whole grain or Dijon. Layer cheese and sliced lunch meat from the deli, what ever you like. Top with sliced avocado, roasted red peppers( from a jar is fine), thinly sliced red onion and sprouts. You can really add on anything you like on a meat sandwich such as chopped kalamata olives. Slice each loaf into about 12 pieces.

Go to the deli at your market,get thin slices of prosciutto,some fresh mozzarella balls,and some roasted red peppers,chop peppers and cheese,put on wrap bread,cut into fourths,sandwiches are so yummy.

Use different breads for sure.I would have different cheeses in them.Maybe dry salami or smoked salmon spread?hope this helps.Do cut them into small samples....

I would not do any sandwiches with a filling that's too spicy, because that may overwhelm the taste buds and ruin it for the wine tasting (unless the food is after all the tasting).

Food before/during: Plain sandwich meats such as ham, turkey, roastbeef slices and cream cheese, or other plain cheeses (not spicy like pepper jack) with mayonnaise.

Food after: Tuna salad, ham salad (chopped ham plus Kraft's Sandwich Spread), cheddar cheese and pimento salad, or egg salad sandwiches.

how about some tortilla wraps instead of sandwiches?
put all different types of fillings like- sprouts, lettuce, avocado, turkey, ham, tuna, tomatoes, cheese- you can either spread on them flavored cream cheese or flavored mayo or mustard. make a bunch of different ones and roll up and slice into sections and secure with toothpicks.
