In my opinion any champagne would fit well with chocolate and strawberries, but if you don't drink a lot of champagne or don't like the dry nature, I'd go for a spumante (Asti is on of the most popular). A spumante is a sparkling wine and is usually a bit sweeter than the typical champagne, but it isn't too sweet and wouldn't over power the dessert. Hope this helps!
